Yannick Tranchant is a French chef and pastry chef renowned for his creativity and expertise. After training in prestigious establishments such as the Ritz and L'Abeille, he co-founded the restaurant Neva Cuisine in Paris in 2011, in partnership with chef Beatriz Gonzalez. There, he developed a refined and innovative cuisine that has been enthusiastically received.

Since 2021, he has been at the helm of the restaurant L'Escargot 1903 in Puteaux, where he enhances seasonal products with a modern and elegant approach. Passionate about harmonious textures and flavors, he stands out for his constant search for originality and perfection in his dishes.

Yannick Tranchant: The Art of Simplicity and Surprise in Pastry

In his plates, Yannick advocates simple and frank tastes, inspired by traditional French pastries, the kind that are first devoured with the eyes. He focuses on the essentials: no complex or ostentatious presentations but simplified graphics and staging to create surprise and pleasure for the guests. Thus, as soon as dessert time rings, the pastry chef leaves his kitchen to animate his plates with regressive flavors. He brings life and play to them, like a mischievous child. The chocolate melts, the sugar sparkles, the meringue breaks, the hazelnut rolls like a die. Yannick Tranchant has found his identity and has now made a name for himself in the great pastry world.
