Anthony Bonnet,

The secret world

In a crescendo gradation, Anthony’s dishes awaken the five senses as if in the middle of an orchard, aesthetic, fragrant, greedy, astonishing, sometimes disconcerting; they guide the gastronomes on an initiatory path where each ingredient is an eulogy to nature as if connected with the invisible world of the living, of which the most accomplished version seems to be the beehive for which the cook devotes a passion that goes back to his childhood The chef from Lyon is like a fish in water when he is in contact with local and Rhône producers, whose bosom he has never left.

Through my cooking inspired by what I know and what I have tasted, I want to transmit and share the true taste of the products. Whatever passions I want to express on the plate, I need to rely on a solid foundation of knowledge and history. Lafont also has one, I find the same vision of things.

Anthony Bonnet and his brigade are busy composing recipes dictated by his inspiration of the moment and his deep convictions: “We must fight to maintain the peasant culture”, he says in a serious tone. Whimsical customer wanting strawberries in December, please refrain, even in a palace.

The story of Anthony Bonnet

Anthony Bonnet was brought up on agriculture by his father and grandfather, farmers in the Monts du Lyonnais. He cooks in connection with nature. This child of the country knows the cycles of the plantations to the rhythm of the seasons. He learned his trade in the kitchens of Jean Brouilly, a starred chef in Tarare, before joining Philippe Gauvreau at the two-starred restaurant La Rotonde, in Charbonnières-les-Bains, a stone’s throw from Lyon. In 2004, the Sibuet family entrusted him with the reins of the restaurant Les Loges, which was quickly acclaimed by the critics, who were seduced by the unbridled creativity of the chef. Awarded the title of “Young Talented Chef” by Gault & Millau in 2007, followed by a first star in the MICHELIN guide in 2012, Anthony Bonnet is now aiming for a second star under the impetus of the Radisson Collections group, the new owner, which has great ambitions for the establishment.
